Amuse Bouche – parmesan basil mousse, salmon chicharrone.
Course 1: starter – honey walnut prawns, sorrel sauce.
Course 2: soup – Theo’s dark chocolate broth, adam’s mushroom.
Course 3: salad – roasted beets, shaved fennel, frisee, chevre, truffle vinaigrette.
Course 4: seafood – langostino and crab ravioli, tarragon cream sauce.
Intermezzo – passionfruit granita.
Course 5: main – cocoa- and coffee-rubbed pork shank, grenache reduction, smashed celeriac & Yukon golds.
